I will be in Shanghai for 72 hours, then flying Vietnam. Will I be able to get visa or permit at Shanghai Airport or do I need to apply for a Visa beforehand?

If your itinerary is USA - Shanghai - Vietnam and there is no other stop on the way, you are eligible for the 144-hour visa-free transit. So no visa is needed and you can get a temporary entry permit at the airport to enter Shanghai.
